Coat Bottom of large pot with Olive Oil

Heat oil and cook onions and garlic until softened

Add tomato paste and cook 1 minute

Season with salt, pepper, red pepper flakes & salt

Deglaze with red wine

Add both cans of tomatoes and the water. Mix well.

Add Parmesan rind

Simmer for at least 2 hours
