Melt butter and olive oil in a large pot

Add onions and salt. Carmelize onions until deep rich brown color

Add red wine and sherry then reduce

Add beef stock, bay leaves, thyme and salt to taste

Let simmer for 1/2 hr.

Season baguette slices with salt, pepper and olive oil. Once toasted rub with garlic clove.
